Teeth and other things

Today has been a long long day it seems. I woke up early to go to my dental appointment. A lady in the waiting room trapped me to tell me stories about how bad fluoride is for you and that if you use it then you are killing yourself. I wanted to run away from her but I was afraid she might follow. When I got back in the exam room I thought again about running away but instead decided to go through with it. It was not as bad as I thought it would be. I worked myself up a bit too much but hey I havent been in forever so sue me. Over 500$ and an hour later half of my teeth are fixed and its on to the next one.

Since changing my job I am now an independent contractor aka I have no clue how to do my taxes so my dad helped me out with learning all that. Its pretty weird, I have to make myself remember to keep all my reciepts etc. Then while I had him in my clutches I decided to get him to help me with blog design as it completely confuses me. Obviously the page is different but also rather ugly so it wont stay that way for long mostly we had to change the previous layout to something else because the code was messed up and wouldnt allow us to make any changes. Um now I will shut up with my nerd speech.

Does it ever weird you guys out when someone in real life comments about something on your blog? I had a friend do that the other day and I will tell you its just something I feel like I wont get used to. Im like whaaat you read my boring silly blog...CRAZAAY!! I never realize that people notice me or know who I am. I always feel like a tiny blip on the worlds radar.

Anyways thats all for now. Ive been lurking this ladys blog and all her recipes. Of course I will be attempting to make those yummy looking cauldron cakes and working on my tummy! Wish me luck!!

Fricase de Pollo

Another day another recipe....or something along those lines. Today I decided to make something random that I hadn't ever cooked before so I went to the recipe book, closed my eyes and opened a page. Fricase de Pollo is what I saw first so off to the grocery me and my mom went to collect foods.

Here is what you will need:

4 boneless chicken breasts
1 large tomato
2 garlic cloves
2 bay leaves
1 tps dried oregano
1/4 tsp black pepper
1/2 cup white wine
8 oz can tomato sauce
1 medium onion
12 pitted green olives
1 tbsp capers
1 1/2 tsp olive oil
1 bell pepper
2 oz jar pimentos

Now firstly you need to chop up your tomato, garlic, onion, pepper and olives. I used a red pepper and I also used black olives as the green are too salty for me. After you do that put all the ingredients except the pimentos in a dutch oven...or a big pot like I did. Over medium heat, bring everything to a boil. Reduce the heat and cook until the chicken is cooked through. Drop the pimentos in and stir it all up. I made basmati rice as well to serve it with. Oh, I also put in a jar of tomato paste to thicken the sauce, I think it adds a little extra something.




Its rather pretty now isnt it?

Zucchini Bread

Yesterday I made delicious zucchini bread because I am a cooking fiend. Hopefully yall dont get fed up with all my cooking adventures.
I got this recipe from the ever perfect Paula Dean, Id show you a picture of my cookbook but its really worn and has dripped food all over it haha. This is one of my favorite recipes. Even if you say you can not cook I promise you will be able to make this really easily. Also you can substitute the Zucchini for Pumpkin if you prefer it and still use the same recipe. This makes 2 loaves if you use the small pans, I dont think it really matters too much what you bake it in.

You will need:

Dry Ingredients
3 1/4 cups all purpose flour
1 1/2 tsp salt
1 tsp ground nutmeg
2 tsp baking soda
1 tsp  ground cinnamon
3 cups sugar

Wet Ingredients
1 cup vegetable oil
4 eggs (beaten)
2/3 cups water
2 cups Zucchini
1 tsp lemon juice
1 cup chopped walnuts or pecans

Now with the zucchini I used 3 large ones and it ended up making a little over 4 cups which is why I made so many loaves and the recipe calls for grated zucchini which is hard to do so I just throw it in the food processor. In baking it seems like you can just mess with stuff, you dont really have to be exact. Oh and my mom takes the skin off when she makes it. I dont which makes it really green so do whatever you want.

Anyways put the oven on 350 degrees. First mix all the dry ingredients together then mix the wet ones separately. After you do this fold the wet into the dry until its mixed really well. Then all that's left is to put them into the pans and cook for an hour. Make sure and stick a tooth pick into them to make sure they are done all the way through. Dont worry as you can see it makes a mess but that is part of the fun.
